Get creative with your local landscape and reconnect with nature through the unique flavors of fermented drinks and concoctions from berries, roots, fruits, seeds, and other natural materials, this summer. Join tastemaker and author, Pascal Baudar, as he teaches students about the principle behind yeast fermentation. The 3 day workshop will cover topics such as: Where do you find wild yeast in nature and how to make a wild yeast starter; Making natural sodas; Exploring the local environment – how to make boozy concoctions using ingredients found in nature and; Ancestral brewing – how to make beers without hops using wildcrafted herbs. Each day, the class will conduct a wildcrafting walk for a couple of hours around Sterling’s vast woods and wild areas to look at and collect edible and medicinal plants, some which will be used in ferments.
